After waiting a month to get the thing because it was back-ordered, I FINALLY got to try out my skillet. I love this thing! Most of my cookware is garden-variety non-stick and hardly suited to things like searing steaks or fajita meat.

You can run this pan as hot as you dare without hurting it - works great for steaks, and makes an awesome cheese steak. The pre-seasoned coating works as advertised, and the cast iron gives good heat transfer and VERY even heat across the entire pan. I think I'm going to be using this skillet A LOT.

A handy suggestion regarding cleaning that I stumbled across on another website... be SURE to use a hot pad while doing this! Immediately after cooking, fill the pan with HOT water (not cold; you could crack it!), put it on high heat, and bring the water to a rolling boil... this will lift debris off the pan bottom. Dump the water and immediately wipe dry with a paper towel, set on the (turned-off) burner briefly to dry completely, and wipe the cooking surfaces with oil.

Another note - want those steaks well-done but juicy? Buy the Lodge Logic 5-qt Dutch oven; the lid fits this skillet! Sear both sides of the steak on medium-high (about 3 min each), then flip, reduce the heat to medium, cover, and cook as desired, flipping the steak once along the way (about 5 minutes per side for a small, well-done filet mignon). Your cooking times may vary, but the combo of cast-iron skillet for searing and lid to keep things moist while cooking works exquisitely. Brown, not black, outside... and tender inside.

How long will the food last?
Most products have a 3-5 year shelf life under proper conditions. Products containing shrimp, tuna, brown rice, nuts, and dairy products have a shelf life of one to two years.

What are proper storage conditions?
The best is a cool, dry environment for our products. The cooler the better. High heat that occurs in a garage or the trunk of a car is not good for these products.

How does AlpineAire Foods extend the shelf life of food?
By using freeze-dried and dehydrated ingredients, most of the water is removed from the item. Each product contains an oxygen absorber, which is iron oxide pellets. Iron oxide attacks the head-space oxygen remaining in the pouch once the pouch has been sealed. Oxygen has moisture so the absorber collects the oxygen and thus slows down the oxidation process that can occur. Oxidation leads to rancidity.

Is the oxygen absorber harmful?
No, it is not harmful, but do not use it as a spice packet. It tastes awful.

What is freeze drying?
Freeze drying is a process used for instant or quick rehydration of certain dried foods. The first step in freeze drying is to rapidly freeze the food. The water content, now frozen, is turned directly into a gas and withdrawn from the food during the next steps, vacuum and low-heat, thus avoiding the shrinkage. Many of AlpineAire's products are custom freeze dried to suit strict quality requirements. Freeze-dried products include grains, beans, fruits, meats, seafood, pastas, vegetables, and eggs. Using this process, 98% of the moisture is removed.

This Coleman drip coffeemaker is the ultimate indulgence for those who love to make coffee outdoors. Why sacrifice the quality of your coffee on a camping trip? This appliance looks to be made by Mr. Coffee for Coleman because Mr. Coffee carafes do fit (I've since learned the corporation that owns Coleman owns Mr. Coffee). The machine uses round basket paper filters, and it's somewhat slower than a home unit, but it will make up to ten cups. One caution here: be sure to keep the handle on the carafe pointing straight out the front when brewing; if it's hanging out toward the side, the handle will get hot and it could melt if your burner is turned way up.

I've also used this coffeemaker on a gas range during a power outage and it worked just fine.

The first thing you need to realize is that when cooking with cast iron, the entire piece gets HOT. It is an even heating surface, and yes, that even includes the handles. That's why Lodge made the Hot Handle Holder Set, and they really hit the nail on the head with this one. 

The holders fit perfectly on the handles of the pans that they make. They slide on easily and can remain there while you're cooking the item, if it is not near an open flame of course. They protect your hands from heat, even when holding the pan for extended periods of time like while you're cleaning it after cooking. 

It also makes the handle more comfortable, and provides a pretty good grip. The red peppers are my favorite, but I also have a set of the green salsa holders and they're nice too. Lodge is a company that is known for their quality, and this product is no exception.

When cooking with cast iron skillets, these pans get HOT, extending through to the handles. I ordered the hot handle holder sets and needless to say, the holder set did not reduce the heat from the handles as I expected. 

Using one of the holders I continued to feel the heat from the handle. But it works better when I used two of the holders on the hot handle. It's too bad Lodge didn't make one holder strong enough to withstand the heat from the handle. I'll continue to use two of the holders but think there could be a less expensive way to protect the cook from potentially dangerous burns from the hot handle.

Lodge Logic 5-Quart Pre-Seasoned Dutch Oven $30

There are so few "cons" to this pot, it's hard to write a review that doesn't sound sappy.

I have a full set of Ultrex, a snappy modern line sold by a company that makes pans for many big names found in department stores. 55 year warranty, they work fine... But they're non-stick and I've started to worry about that.

Not long ago, a study came out that suggested eating foods cooked in Teflon pans left molecules of something or other floating around in the person's blood for FOUR YEARS. I thought twice about this and decided it was time to look into other pans. It might turn out to be benign - but what if it isn't?

I was addicted to good browning, was used to it from Cuisinart pans and Ultrex. I tried Calphalon hard-anodized aluminum. One burning incident and that pan was RUINED, totally ruined, nothing would clean it.

I've cooked in this Lodge Logic pre-seasoned for a dozen meals now, meat and fish, vegetables too. I've used all types of fats - olive oil, butter, corn oil. Tonight it made a gravy to die for - using heavy cream and mushrooms.

You do have to get used to its different heating cycle. It heats up slower than some other materials. It cools off slower too. But it is fuel efficient and you can do a lot of cooking on Low.

My #1 demand was that it brown meat well. It does that SPLENDIDLY. Really beautiful. Heat the pan for 5 minutes on near High. Throw in two tablespoons of olive oil, throw in stew meat and it will brown in four minutes, magazine picture perfect. Stir with a wooden spoon. Throw in vegetables once the meat's browned. A few cups of water, put the lid on, turn it down to Medium for 15 minutes, Low for another 15 minutes -- it will look like a magazine cover stew. Browning a roast is even easier -- and you can put it into the oven after browning.

If I had to complain of anything, it would be that cast iron is heavy. I'm not sure how much of a problem this will be. This is still a small enough pot to handle for most people. You can roast a whole chicken in it so if that's the quantity you cook, click the pic above and buy this right NOW, you can't go wrong.

I own three pieces of cast iron cookware, and this item is one of them... and among my favorite cooking implements, period. For dishes requiring steady, even heat and for cooks who require durable cookware with easy clean-up, cast iron CANNOT be beat!

This fryer is going to last forever. Its care is easy: I scrub it with hot water only, and dry it with an old rag and apply a thin layer of vegetable oil while the iron is still hot... a year and a half later, it's still rust-free and delivering the reliable service I have come to expect and admire. 

No scratches interfere with its performance, as is the case with my allegedly-long-lasting Wearever nonstick cookware set (what a waste of money THAT was!). In fact, in this particular chicken fryer, I've produced everything from french fries to spaghetti sauce to eggs and bacon to french toast! It's a dependable griddle, skillet, grill, and pot, and it goes right from the stovetop and into the oven for maximum versatility.

The best thing about the chicken fryer is its somewhat smaller circumference than the skillet or the Dutch oven. It takes up a bit less stovetop space and provides greater depth, making it ideal for small batches of soups, stews, or deep-fried goodies.

I am an avid home-chef, and I can say without exception that my cast-iron cookware is the best kitchen investment I've ever made.

I can't say enough good things about the pre-seasoned cast iron. It is especially helpful to people who are new to using cast iron. This is a big skillet and the only drawback is the weight, it is VERY heavy. 

Once you get used to using cast iron and find out how it retains heat and cooks great, you will love it. I find that cleanup is easy too. After you are done cooking (while it is still hot), fill it half full with water and leave it on the still warm burner & the food will basically cook itself off.

If necessary use a brush to loosen anything left on the pan, rinse with hot water (do NOT use soap) and dry. While the pan is still warm from the hot water, smooth a thin layer of shortening over it and wipe off excess with a paper towel. If the pan is still too hot to use my fingers, I use a small toothbrush and rub the shortening on with it. If you are cooking for less than four people, buy the smaller size skillet.

I love cooking with cast iron. This pan is great for making those 3 egg omelets, pancakes, fried eggs, etc. The low lip makes it easy to get the spatula under the eggs and flip them. On the down side if you fry bacon or sausages in it, the grease will spatter the stove. On a campfire that of course won't be a problem.

However if you have limited space in your kitchen cabinet get the combo cooker. The lid is nearly as large as this one and you get the fry pan as well.

On the plus side, this pan being thin fits right under the stack of cast iron pans I already own. So if you cook for a large family and want to serve everyone faster, this is a good way to go as an additional pan.

Lodge Logic Pre-Seasoned Cast-Iron 8-Inch SkilletLodge Logic Pre-Seasoned Cast-Iron 8-Inch Skillet $10

I cook for myself, so this little skillet is the perfect size for 3-egg omelet in the morning, or veggie sauté for dinner. I am a small to medium sized female w/ skinny arms, but this skillet is not too heavy so I can still lift it w/ one arm. 

It's not really non-stick because the eggs won't easily slide off the pan like they would from a good new non-stick pan, but it's much much better compared w/ my stainless steel skillets. As long as you soak the pan in water after cooking, by the time you finish your meal, the food residue can be easily washed off with a brush or sponge. I use a nylon dish brush with hot water and cleaning is very fast and easy. I never use soap or steel wool. 

Leaving a bit grease on acts like re-seasoning. This is the same way I take care of my carbon-steel wok. The only complaint I have is that the handle is way too short. The skillet is relatively heavy but even with my small hands it still feels as if the handle only fits half of my palm, so it forces your hand to hold it really close to the hot pan - really bad design. Though I use it everyday and find it indispensable, the short handle alone is why I am unwilling to give it a five star rating.

I recently purchased the Lodge 7 qt. Dutch oven and am delighted with it.

I do a lot of French roasting (preheating the skillet to 400+ degrees in the oven, then placing it on stovetop over high heat to sear the meat/poultry, then placing back in the oven at reduced temperature). I don't have to be concerned about melting handles, ruining non-stick coatings or warping, and the heavy cast iron absorbs, distributes and retains heat beautifully, as advertised.

My first 'project' with it was my version of French 'Chicken In A Pot'. I seared a trussed, seasoned 5 ½ pound whole chicken on all sides in a stick of melted butter (it browned just beautifully!), added mirepoix, bouquet garni and chicken stock and put the Dutch oven in the oven uncovered at 375 degrees for 1 hour. I then added large-cut potatoes, carrot, celery, onion and leek and let it continue for about 1 ½ hours covered, basting about every 15 minutes until the chicken and vegetables tested done. The chicken was incredibly moist and tender (better than I've ever had) and the vegetables were al dente and very full flavored and colorful - all in one pot! The resulting juices made fantastic gravy.

Clear instructions for care and seasoning came with the Dutch oven. During the seasoning process it turned ugly (just like it's supposed to) and the kitchen took on the faint aroma of a foundry, but now it is truly non-stick, especially if you start off with it preheated in the oven to very hot (400+).

The flavors of foods are so much better with cast iron! I could say it was my imagination if not for the fact that I've heard this claim from so many other cast iron users.

I wash it with clear water and a soft brush, dry it with a dish towel, then place it in a warm oven for about 15 minutes to dry it thoroughly, then wipe a light coat of vegetable oil all over it and it's ready to go again. The 'household' understands that I am the only one who cleans it and that it is never to be soaked. The standing rule is "Just leave it and I'll take care of it". There are no objections.

I clicked the pic above and purchased the Dutch oven as a result of being so pleased with my recently purchased Lodge 12" skillet (especially after I read one of the other reviewer's tip that the Dutch oven's lid also fits the 12" skillet, which it does perfectly).

All this for a fraction of the price of the 'trendy' cookware (and it will easily outlive them). I would consider my new Lodge Dutch oven a bargain at twice the price.

We have this fryer and like it very much. We always fry outside so there is no mess and smell anyway. We use the burner on our grill or the base for our turkey fryer with this.

It's the perfect size for frying fish, hushpuppies, fries and onion rings. Makes a good batch without having to fill with so much oil. Our thermometer works just fine and clips on the pot too. We do usually use it without the basket though and just scoop out as food is done.

Lodge is our favorite brand in cast iron. Cast iron is so durable, food doesn't stick to it and most important for us - it puts a little iron in the food, not aluminum like so many products.

I am a great fan of cast iron cookware and have quite a few pieces. The 10-1/2 in. round griddle is my first by Lodge however, I just happened to see it on sale and clicked the pic above and bought it. 

Although I think the overall quality is good, I soon realized the handle was much too short. I do not have large hands (I'm 5'8" and 145 lbs. male) yet handling the pan is really awkward especially if the handle or my hand is wet (forget soapy). In fact I have a couple of 10-1/2 in. skillets (not Lodge nor both the same brand) that even though they are heavier they are much easier to handle because they weren't so stingy with the amount of material used for the handle.

 

Snow Peak Titanium Cookware - 3pcs $35

Compact and extremely light and durable (titanium). Stuffs nicely in a black nylon mesh bag. Your backpacking stove will also fit nicely inside this 3-piece kit. 

Pots can become extremely hot as well, the handles (on each piece) are not coated or have a protecting, an oven mitt is recommended. Other than that, I would highly recommend this cookware. The price is also great for many uses of this product!

This is an awesome grill. If you're carnivores, you will not believe how delicious it grills steaks. You just have to follow their directions to take care of the iron which is no big deal. My first piece, the 12" skillet, I bought unseasoned. It was a bit of a mess (though still worth it), but I decided to buy the rest with Lodge's preseasoning. Every time you use it it gets better.

I now own the 8" skillet, the 12" skillet, the 5 qt. dutch oven, and the grill/griddle. Beardsmen's prices are insanely cheap. Almost half the price of other cooking web sites!

I bought this skillet over one month ago. It is wonderful. It makes perfect omelet's and fried eggs. This is my new everyday pan. I used to be a fan of nonstick pans, however, after noting the nonstick coatings coming off my pans, I went back to the basics with cast iron.

I have owned an 8-inch Lodge cast iron skillet for years and it is my favorite size skillet for a variety of uses. I often sauté onions and green peppers in it, as well as cook my scrambled eggs in it each morning. It's a great size for cooking a hamburger or grilled cheese sandwich. It's perfect for frying up one or two pieces of chicken if you're eating alone tonight.

I have found that Lodge cast iron is the heaviest cast iron cookware on the market. For that reason I consider it the best. And the price is a steal! These things will last you your entire life, and just get better and better as time goes by.

And unlike some people, I find taking proper care of my Lodge cast iron cookware is a breeze. No, you can't put them in the dishwasher, but so what?! They'll clean up just fine with a quick rinse and light scrub with a plastic scouring pad or good stiff brush, using very hot water. Dry thoroughly, then a good wipe all over, inside and out with a light coating of vegetable oil or shortening, and there you have it!

I have a variety of Lodge cast iron skillets and I find that the little 8-inch is one of the most versatile sizes for everyday cooking purposes. You cannot go wrong with Lodge-OR their great little 8-inch skillet! I wouldn't buy any other brand of cast iron cookware!

I clicked the pic above and purchased this item based on other reviews and I am not sorry I made the purchase for several reasons. I love Lodge Cast Iron, Beardsmen has the best prices anywhere. However, I was taken aback by the size of this skillet. It is huge! I tried it on my gas range and it takes up the front and the back burners but adjustments are needed to keep the sides from burning.

If it is used on just the front burner (the larger burner) the flame is directed to the middle of the pan but there is so much skillet left over that the outer edges never get really hot. I would think the 13 inch skillet (which I just purchased also) would make a more reasonable purchase because it is between a 12 which might be too small and the 15 1/4 which is toooooo big!

This is the classic size that is used by scouts, chuck wagon cooks, and outdoor enthusiasts of all kinds. It is a #12 which is the "standard" size most commonly used, but there are dozens of sizes bigger and smaller. This one holds 8 quarts, measuring 12" in diameter by 5" tall. 

It has the tripod legs and a recessed lid best suited for cooking in coals. You can flip this lid over and use it as a skillet if you need to. I also have the dutch oven with no legs and a domed lid for use in a home oven. You can do it all with a Dutch Oven - cobblers, stews, beans, roasts, dumplings, you name it.

QUALITY: There is a reason you can find old cast iron pans in antique stores, it lasts forever. I have quite a few pans and stuff inherited from family members and even some garage sale finds. While my fancy and expensive non-stick cookware seems to last no more than a few years before replacement in my kitchen, but this stuff can easily last many decades of daily use. It has a life time warranty!

 I love to cook with cast iron even at home, it is so durable, but I can take it camping too. Easy to clean up, the only drawback being it is heavy. Cast iron takes a bit longer to heat up, but the heat transfers evenly without hot spots and it retains its heat for a long time. I am not sure why, but people swear things taste better in cast iron. It just seems that cast iron only improves with use instead of wearing out like other pans.

CLEANING: A couple of tips on caring for your oven, they say you should not use soap but this is not exactly sanitary. If you use soap be sure it is mild. One trick is to boil hot water in it and scrub it with a long handle brush. Use a plastic brush or plastic scrubber, but never a metal scrubber or brush. For the most part, cast iron is non-stick as long as it is seasoned. The trick is to clean it right away and not to leave it in the water too long or let it dry with food in it. Do not use it at temperatures higher than 500 degrees, as it can crack. An old Boy Scout trick to keep the outside clean if used on a fire, is to wipe the outside with some wet soap and let it dry before using. This will make the coal soot just wipe right off when you clean up.

SEASONING FINISH: Seasoning does not refer to flavor, but the finish, a kind of glaze on the pan. The modern version sold here is pre-seasoned and ready to cook in, but we used to have to season these ourselves in the old days. It needs to stay black and a bit shiny inside to stay seasoned. If you do lose your seasoning due to rust or an overaggressive cleaning, simply wipe it with vegetable oil inside and out and place it in a hot oven for about 20 minutes or so. Let it cool naturally. It also helps to wipe it with a paper towel of vegetable oil after washing and drying, or spray it with cooking oil and wipe. If it gets rusty, scrub it up good and re-season it, you can get it like new again. DO NOT cook on it without re-seasoning though.

PS -- this thing is a *treasure* when you're camping because it soaks up heat like nothing else. I received my beautiful Lodge Enamel 7 quart pot a few weeks ago and it performs and looks beautiful.

My only complaint is the "Made in China" label on the box. Lodge prides itself as being the only cast iron maker in the US, and now makes it's highest priced enamel line in China!! That alone is worth at least a one star reduction.

This piece looks and cooks like a dream. Quick boil, slow simmer, very easy clean up. Dollar for dollar the best buy on the market. If Lodge gave us more size options Le Cruset would need to rethink their prices.

This is such a great pan for omelets because of the sloped sides that allow you to slide underneath. This would be a great first piece of cast iron for someone new to using it because of the size and it is pre-seasoned. I use it all the time & it just keeps getting better!

Is not fully seasoned out of the box but within a short time will be a non-stick HIGH heat sauté pan. Lighter in construction than other lodge pans it handles well. The casting ridges are not ground down but you will be using a potholder. Great tool period.

Lodge Logic Pro 20-by-10-7/16-Inch Cast-Iron Grill/Griddle $33

I absolutely adore this griddle, and I use it almost every day.

At first, I wasn't sure that I wanted a cast iron griddle. They are HEAVY and not dishwasher safe . . . so I tried a few nonstick brands first --top dollar brands with high ratings.

I hated them. The nonstick surface was inferior. On a reversible griddle, the underside became sticky and difficult to clean. The heat was distributed unevenly. One claimed to be dishwasher safe, yet when I put it in the dishwasher, some of the nonstick surface came off.

I am extremely health conscious, and I use very little oil when I cook. Food often stuck to the "non-stick" surface -- go figure.

I wanted to find a great griddle that I could use for many things, including cooking like the chefs in Japanese Steak Houses -- I dreamed of using a small dash of my favorite oil and flinging shrimp, chicken and veggies on the griddle like a pro. No, I didn't think I could toss my tools in the air or catch the shrimp in my pocket . . . I just wanted the flavor and the ease of cooking.

By this time, I was on a quest, and the non-stick stuff just wasn't cutting it. I did a little research, and I learned that pros recommend the Lodge griddle, so despite my apprehension, I thought I'd give it a try.

Wow! The pre-seasoned surface is perfect and better than any non-stick surface I have ever used. Just a tiny bit of non-stick spray is all I need, and everything from pancakes to eggs flip with ease. Grilling Japanese style works perfectly.

On the grill side: whole steaks, chicken, fish -- fabulous, fast, and everything has those beautiful grill lines. Nice for grilled vegetables, too.

The griddle is indeed heavy, but it's okay. I wouldn't recommend lifting it if you have serious muscle or joint problems, and I wouldn't want to drop it on my foot, but otherwise, go for it. I'm a softie, and if I can handle it, so can you.

As for not being able to put the griddle in the dishwasher: I don't believe I'm going to say this, but I don't care about having to hand wash it. The griddle cleans so easily, a few swipes and I'm done. If I forget to clean it and wake up to it the next morning (okay, so I'm not Suzy Homemaker), I just lay it straight across the top of my sink -- not IN the sink, but rather, balanced from edge to edge, on top . . . and I run a little water over it, let it set for a few minutes, and it's easy to clean.

A word of advice: Just as it says in the instructions, you need to clean the griddle without soap (water only) to preserve the pre-seasoned finish. However, should you want to use soap, you can. There are instructions included in how to re-season the griddle -- it's easy.

I frankly didn't like the idea of not cleaning with soap. I didn't feel as though the germs were destroyed . . . but soap doesn't really kill germs, it merely works as a surfactant that makes water wetter so things become easier to clean.

If you want to kill germs, heat is one of the best ways to do it. Every time you use the griddle, you preheat it on the range for about five minutes or so -- you're killing far more germs than if you had used soap!

You can also rub your griddle with a very light coating of oil, stick it in a hot oven and disinfect it that way (this is also similar to how you reseason it).

This is one of the easiest, most wonderful kitchen tools I own. It is a breeze to use, I feel like a pro flipping all that food around. Everything comes out great, and it is very easy to use, and food does not stick. I am going to add more cast iron to my kitchen.

I remember reading somewhere that using cast iron also adds iron to your diet. A nice extra, yes?
